Red Velvet Cake with Buttercream Frosting

Description

Very moist red velvet cake — with excellent buttercream frosting. A family tradition, as well as a favorite. Great for holidays!

Ingredients

  • 2 cups cake flour
  • 1 (3.9 ounce) package instant chocolate pudding mix
  • 2 tablespoons unsweetened cocoa powder
  • 1 teaspoon salt
  • ½ cup butter, softened
  • 1 ½ cups white sugar
  • 2 eggs
  • 1 cup buttermilk
  • 1 teaspoon vanilla extract
  • 2 ounces red food coloring
  • 1 teaspoon baking soda
  • 1 tablespoon distilled white vinegar
  • ¼ cup all purpose flour
  • 1 cup milk
  • 1 cup white sugar
  • 1 cup butter, softened
  • 1 teaspoon vanilla extract

Instructions

  1. Preheat oven to 350 degrees F (175 degrees C). Grease and flour 2 9-inch cake pans. In a bowl
  2. sift together the cake flour
  3. chocolate pudding mix
  4. cocoa powder
  5. and salt.
  6. In a large bowl
  7. beat 1/2 cup of butter with 1 1/2 cup of sugar with an electric mixer until creamy; beat the eggs in
  8. one at a time
  9. and beat until the mixture is fluffy
  10. about 1 minute. Beat in the flour mixture
  11. alternating with buttermilk
  12. in several additions. Mix in 1 teaspoon of vanilla extract and the red food color until the batter is uniformly colored. In a bowl
  13. stir the baking soda with vinegar
  14. and gently fold the foamy mixture gently into the batter. Pour the batter into the prepared cake pans.
  15. Bake in the preheated oven until a toothpick inserted into the center of a cake comes out clean or with moist crumbs
  16. about 30 minutes. Allow to cool completely before frosting.
  17. For frosting
  18. place all-purpose flour in a saucepan
  19. and gradually whisk milk into the flour
  20. about 2 tablespoons at a time
  21. until smoothly combined. Bring the mixture to a simmer over medium-low heat
  22. whisking constantly until thickened and smooth; allow to cool completely. Beat 1 cup of sugar and 1 cup of butter in a bowl with an electric mixer until fluffy
  23. about 1 minute
  24. and gradually beat in the cooled milk mixture; add 1 teaspoon of vanilla extract. Beat the frosting until fluffy and spreadable
  25. 1 to 2 more minutes.
