Description
This quinoa salad with black beans, cilantro, and cucumber is ready in 30 minutes.
Ingredients
- 2 cups water
- 1 cup quinoa, rinsed
- ¼ cup extra-virgin olive oil
- ¼ cup lime juice
- 2 teaspoons ground cumin
- 1 teaspoon salt
- 1 (15 ounce) can black beans, drained and rinsed
- 1 ½ cups diced cucumber
- ¼ cup chopped fresh cilantro
- salt and ground black pepper to taste
Instructions
- Bring water and and quinoa to a boil in a saucepan. Reduce heat to medium-low
- cover
- and simmer until quinoa is tender and water has been absorbed
- 15 to 20 minutes. Set aside to cool.
- Whisk olive oil
- lime juice
- cumin
- and 1 teaspoon salt together in a bowl to make dressing.
- Combine cooled quinoa
- black beans
- and cucumber in a large bowl. Pour in dressing and toss to coat. Stir in cilantro and season with salt and pepper. Refrigerate or serve immediately.
