Black Bean Quinoa Salad

Description

This quinoa salad with black beans, cilantro, and cucumber is ready in 30 minutes.

Ingredients

  • 2 cups water
  • 1 cup quinoa, rinsed
  • ¼ cup extra-virgin olive oil
  • ¼ cup lime juice
  • 2 teaspoons ground cumin
  • 1 teaspoon salt
  • 1 (15 ounce) can black beans, drained and rinsed
  • 1 ½ cups diced cucumber
  • ¼ cup chopped fresh cilantro
  • salt and ground black pepper to taste

Instructions

  1. Bring water and and quinoa to a boil in a saucepan. Reduce heat to medium-low
  2. cover
  3. and simmer until quinoa is tender and water has been absorbed
  4. 15 to 20 minutes. Set aside to cool.
  5. Whisk olive oil
  6. lime juice
  7. cumin
  8. and 1 teaspoon salt together in a bowl to make dressing.
  9. Combine cooled quinoa
  10. black beans
  11. and cucumber in a large bowl. Pour in dressing and toss to coat. Stir in cilantro and season with salt and pepper. Refrigerate or serve immediately.
