Pineapple Fried Rice with Ham

Description

A quick and easy weeknight meal that’s so much cheaper, tastier, and healthier than take-out! It is made with brown rice and lots of vegetables.

Ingredients

  • 3 tablespoons soy sauce
  • 1 tablespoon sesame oil
  • ½ teaspoon ground ginger
  • ¼ teaspoon white pepper
  • 2 tablespoons olive oil
  • 1 onion, diced
  • 2 cloves garlic, minced
  • 2 carrots, peeled and grated
  • ½ cup frozen corn
  • ½ cup frozen peas
  • 3 cups cooked brown rice
  • 2 cups diced pineapple
  • ½ cup diced ham
  • 2 green onions, sliced

Instructions

  1. Whisk soy sauce
  2. sesame oil
  3. ground ginger
  4. and white pepper together in a bowl; set aside.
  5. Heat olive oil in a large skillet or wok over medium-high heat. Add onion and cook
  6. stirring often
  7. until soft and translucent
  8. 3 to 4 minutes. Add garlic and cook for an additional 30 seconds. Stir in carrots
  9. corn
  10. and peas and stir-fry until vegetables are tender
  11. 3 to 4 minutes.
  12. Stir in brown rice
  13. pineapple
  14. ham
  15. green onions
  16. and soy sauce mixture. Cook
  17. stirring constantly
  18. until heated through
  19. about 2 minutes. Serve immediately.
