Whole Wheat Oat Waffles

Description

Healthy whole wheat pastry flour is combined with wonderful oat flour for a very yummy waffle.

Ingredients

  • ½ cup whole wheat pastry flour
  • ½ cup all-purpose flour
  • 1 cup oat flour
  • ¼ cup white sugar
  • 1 tablespoon baking powder
  • ½ teaspoon salt
  • 2 eggs, separated
  • 1 ½ cups milk
  • 2 tablespoons canola oil
  • 1 teaspoon vanilla extract

Instructions

  1. Preheat a waffle maker according to manufacturer’s directions.
  2. Whisk whole wheat flour
  3. all-purpose flour
  4. oat flour
  5. sugar
  6. baking powder
  7. and salt together in a bowl. Whisk egg yolks
  8. milk
  9. canola oil
  10. and vanilla extract in a separate bowl. Beat egg whites in a third bowl (not plastic) with an electric mixer until soft peaks form when you lift the beaters straight out of the beaten eggs
  11. 1 to 2 minutes.
  12. Make a well in the dry ingredients and pour the milk mixture into the well; mix batter until smooth. Gently fold the egg whites into the batter
  13. retaining as much volume as possible. Let batter stand until slightly thickened
  14. about 5 minutes.
  15. Pour 1/2 cup of batter
  16. or amount recommended by the manufacturer
  17. onto the waffle maker; close lid and bake waffle until browned and crisp
  18. 2 to 4 minutes.
