Ingredients

  • 1 (16 ounce) container BelGioioso Ricotta Con Latte®
  • ¼ cup white sugar
  • 2 tablespoons semisweet chocolate chips
  • 12 lemon-flavored shortbread cookies
  • 6 mint sprigs

Instructions

  1. Combine BelGioioso Ricotta con Latte cheese with sugar until well blended. More sugar may be added if a sweeter filling is preferred. Stir in the chocolate chips; cover and refrigerate mixture for at least 30 minutes before serving.
