Quick Quiche

Description

When you don’t have the time to make a pastry crust, try this quick lunch idea. You may add any other goodies you like, such as ham, chicken, crab, shrimp or broccoli.

Ingredients

  • 8 slices bacon
  • 4 ounces shredded Swiss cheese
  • 2 tablespoons butter, melted
  • 4 eggs, beaten
  • ¼ cup finely chopped onion
  • 1 teaspoon salt
  • ½ cup all-purpose flour
  • 1 ½ cups milk

Instructions

  1. Preheat the oven to 350 degrees F (175 degrees C). Lightly grease a 9-inch pie pan.
  2. Place bacon in a large skillet and cook over medium-high heat
  3. turning occasionally
  4. until evenly browned
  5. about 10 minutes. Drain bacon slices on paper towels. Crumble and set aside.
  6. Cover the bottom of the prepared pie pan with shredded cheese and crumbled bacon. Whisk together milk
  7. eggs
  8. flour
  9. onion
  10. butter
  11. and salt in a large bowl until smooth. Pour mixture over cheese and bacon in the pie pan.
  12. Bake quiche in the preheated oven until the center is set
  13. about 35 minutes. Serve hot or cold.
