Brazilian Coffee Cookies

Description

A gingersnap-like cookie with real coffee flavor.

Ingredients

  • ⅓ cup shortening
  • ½ cup packed brown sugar
  • ½ cup white sugar
  • 1 egg
  • 1 ½ teaspoons vanilla extract
  • 1 tablespoon milk
  • 2 cups all-purpose flour
  • ½ teaspoon salt
  • ¼ teaspoon baking soda
  • ¼ teaspoon baking powder
  • 2 tablespoons instant coffee powder

Instructions

  1. Preheat the oven to 400 degrees F (205 degrees C). Line baking sheets with parchment paper.
  2. Whisk flour
  3. coffee powder
  4. salt
  5. baking soda
  6. and baking powder together in a bowl.
  7. Combine brown sugar
  8. white sugar
  9. shortening
  10. egg
  11. milk
  12. and vanilla in a large bowl; beat with an electric mixer until fluffy. Gradually mix in flour mixture until thoroughly combined.
  13. Shape dough into 1-inch balls and place 2 inches apart on the prepared baking sheets. Use a fork to flatten balls to a thickness of 1/8 inch.
  14. Bake in the preheated oven
