French Coconut Pie

Description

This is very rich and custard-like with coconut and pecans

Ingredients

  • 2 ¼ cups white sugar
  • 2 tablespoons all-purpose flour
  • 6 eggs
  • 1 cup buttermilk
  • ½ cup margarine, melted
  • 1 cup flaked coconut
  • 1 cup chopped pecans
  • 2 prepared 8 inch pastry shells

Instructions

  1. Preheat oven to 350 degrees F (175 degrees C). In a small bowl
  2. mix together the sugar and flour.
  3. In a large bowl
  4. mix the eggs with a wire whisk. Whisk flour mixture into eggs
  5. until smooth. Stir in buttermilk
  6. margarine
  7. coconut and pecans. Pour into unbaked pie crusts.
  8. Bake in preheated oven for 45 minutes. If making a 9 inch deep dish pie
  9. bake for 1 hour.

Prep Time: 10 mins

Cook Time: 45 mins

Total Time: 55 mins
