This tasty quiche is the perfect way to use up leftover chicken and provides plenty of fresh veggies to make it an easy one-dish meal. Chopped fresh tomatoes sprinkled over the top add just the right zing.
Ingredients
- 1 pound fresh asparagus, trimmed and cut into 1/2-inch pieces
- 5 eggs
- ½ cup half-and-half
- 1 tablespoon dried parsley
- ½ teaspoon salt
- ground white pepper to taste
- ¼ teaspoon green (mild) hot pepper sauce (such as Tabasco®)
- 2 cups diced cooked rotisserie chicken
- 1 cup shredded Swiss cheese
- ½ cup shredded Monterey Jack cheese
- ½ cup sliced fresh mushrooms
- 4 green onions, chopped
- 2 teaspoons all-purpose flour
- 1 unbaked 9-inch pie crust
- 3 spears fresh asparagus, trimmed
- ¼ cup cherry tomatoes, quartered (Optional)
