Asparagus Chicken Quiche

Description

This tasty quiche is the perfect way to use up leftover chicken and provides plenty of fresh veggies to make it an easy one-dish meal. Chopped fresh tomatoes sprinkled over the top add just the right zing.

Ingredients

  • 1 pound fresh asparagus, trimmed and cut into 1/2-inch pieces
  • 5 eggs
  • ½ cup half-and-half
  • 1 tablespoon dried parsley
  • ½ teaspoon salt
  • ground white pepper to taste
  • ¼ teaspoon green (mild) hot pepper sauce (such as Tabasco®)
  • 2 cups diced cooked rotisserie chicken
  • 1 cup shredded Swiss cheese
  • ½ cup shredded Monterey Jack cheese
  • ½ cup sliced fresh mushrooms
  • 4 green onions, chopped
  • 2 teaspoons all-purpose flour
  • 1 unbaked 9-inch pie crust
  • 3 spears fresh asparagus, trimmed
  • ¼ cup cherry tomatoes, quartered (Optional)
