Fried Rice with Cilantro

Description

A delicious fried rice. You can use either chicken, pork, bacon or seafood – great with calamari and prawns.

Ingredients

  • 4 tablespoons vegetable oil
  • 5 cloves garlic, finely chopped
  • 2 green chilies, diced
  • 2 cups cubed skinless, boneless chicken breast meat
  • 2 cups cooked jasmine rice, chilled
  • 1 tablespoon white sugar
  • 1 tablespoon fish sauce
  • 1 tablespoon soy sauce
  • 2 teaspoons chopped green onion
  • 2 tablespoons chopped fresh basil leaves
  • 5 tablespoons chopped fresh cilantro

Instructions

  1. Heat the oil in a wok or large skillet
  2. over medium-high heat. Fry the garlic until golden
  3. then add the chili pepper and chicken meat
  4. and stir-fry until cooked through.
  5. When the chicken is cooked
  6. add the rice
  7. sugar
  8. fish sauce
  9. and soy sauce. Cook over medium heat
  10. stirring gently. When the mixture is well blended
  11. stir in the green onions
  12. basil
  13. and cilantro. Cook for 1 more minute
  14. then serve hot.
