Magic Mango Bread

Description

I never particularly cared for mangos until I tried this recipe. This recipe came from a friend in Hawaii and is the only bread I now make.

Ingredients

  • 2 cups all-purpose flour
  • 2 teaspoons baking soda
  • ½ teaspoon salt
  • 2 teaspoons ground cinnamon
  • ½ cup butter, softened
  • ½ cup vegetable oil
  • 1 ½ cups white sugar
  • 3 eggs
  • 1 teaspoon vanilla extract
  • 3 cups peeled, seeded and chopped mango
  • ½ cup raisins
  • ½ cup chopped walnuts
  • ½ cup shredded coconut

Instructions

  1. Preheat the oven to 350 degrees F (175 degrees C). Lightly grease two 9×5-inch loaf pans.
  2. Sift together flour
  3. baking soda
  4. salt
  5. and cinnamon in a medium bowl. Set aside.
  6. Beat together butter
  7. oil
  8. and sugar in a large bowl until light and fluffy. Stir in eggs
  9. one at a time
  10. beating well after each addition. Stir in vanilla. Add flour mixture and mix just until combined. Fold in mango
  11. raisins
  12. walnuts
  13. and coconut
  14. mixing just enough to evenly combine. Transfer batter to the prepared pans and let stand for 20 minutes.
  15. Bake in the preheated oven until a toothpick inserted into the centers of loaves comes out clean
  16. 50 to 60 minutes.
