Rhubarb Strawberry Crunch

Ingredients

  • 1 cup white sugar
  • 3 tablespoons all-purpose flour
  • 3 cups sliced fresh strawberries
  • 3 cups diced rhubarb
  • 1 ½ cups all-purpose flour
  • 1 cup packed brown sugar
  • 1 cup butter
  • 1 cup rolled oats

Instructions

  1. Preheat the oven to 375 degrees F (190 degrees C).
  2. Make the fruit layer: Mix strawberries
  3. rhubarb
  4. white sugar
  5. and flour together in a large bowl. Place the mixture in a 9×13-inch baking dish.
  6. Make the topping: Combine 1 1/2 cups flour
  7. brown sugar
  8. oats
  9. and butter and mix until crumbly. You may want to use a pastry cutter for this. Sprinkle on top of the rhubarb and strawberry layer.
  10. Bake in the preheated oven until crisp and lightly browned
  11. about 45 minutes.
