Pumpkin Soup

Description

This delicious, cream-like soup is served at our family’s Thanksgiving dinner every year.

Ingredients

  • 6 cups chicken stock
  • 1 ½ teaspoons salt
  • 4 cups pumpkin puree
  • 1 teaspoon chopped fresh parsley
  • 1 cup chopped onion
  • ½ teaspoon chopped fresh thyme
  • 1 clove garlic, minced
  • ½ cup heavy whipping cream
  • 5 whole black peppercorns

Instructions

  1. Place chicken stock
  2. pumpkin puree
  3. onion
  4. garlic
  5. salt
  6. thyme
  7. and peppercorns in a large pot; bring to a boil. Reduce heat to low and simmer
  8. uncovered
  9. 30 minutes.
  10. Transfer soup to a blender or food processor in batches; blend until smooth.
  11. Return soup to the pan and bring to a boil; reduce heat to low and simmer
  12. uncovered
  13. for 30 minutes.
  14. Stir in heavy cream. Ladle soup into bowls and garnish with fresh parsley.
