Parmesan and Basil Chicken Salad

Description

A creamy, yummy chicken salad that is a little different from the usual recipes.

Ingredients

  • 2 whole skinless, boneless chicken breasts
  • salt and pepper to taste
  • 1 cup mayonnaise
  • 1 cup chopped fresh basil
  • 2 cloves crushed garlic
  • 3 stalks celery, chopped
  • ⅔ cup grated Parmesan cheese

Instructions

  1. Season chicken with salt and pepper. Roast at 375 degrees F (190 degrees C) for 35 minutes
  2. or until juices run clear. Let cool
  3. and chop into chunks.
  4. In a food processor
  5. puree the mayonnaise
  6. basil
  7. garlic
  8. and celery.
  9. Combine the chunked chicken
  10. pureed mixture
  11. and Parmesan cheese; toss. Refrigerate
  12. and serve.
