Berry Baked Oatmeal

Description

This baked oatmeal is a healthy way to start your day. The oat bran and chia seeds add protein and fiber to keep you full to lunch time.

Ingredients

  • cooking spray
  • 1 ½ cups oats
  • ⅓ cup packed brown sugar
  • ¼ cup oat bran
  • ¼ cup chia seeds
  • 1 teaspoon baking powder
  • 1 teaspoon ground cinnamon
  • ½ teaspoon dried orange peel
  • ¼ teaspoon salt
  • 2 cups milk
  • 2 eggs
  • 3 tablespoons honey
  • 1 ½ tablespoons butter, melted
  • 1 ½ teaspoons vanilla extract
  • 1 cup chopped fresh strawberries
  • 1 cup fresh blueberries

Instructions

  1. Preheat oven to 375 degrees F (190 degrees C). Spray an 8×8-inch glass baking dish with cooking spray.
  2. Mix oats
  3. brown sugar
  4. oat bran
  5. chia seeds
  6. baking powder
  7. cinnamon
  8. orange peel
  9. and salt together in a bowl. Whisk milk
  10. eggs
  11. honey
  12. butter
  13. and vanilla extract together in a separate bowl.
  14. Layer strawberries into the prepared baking dish; top with oat mixture. Pour milk mixture over oat mixture and top with blueberries.
  15. Bake in the preheated oven until lightly browned and set
  16. 23 to 28 minutes.
