Vegan Overnight Oats with Chia Seeds and Fruit

Description

Chia seeds, oats, and fruit soak overnight in almond milk for a nutritious vegan breakfast of champions! I like my oatmeal warm, so I heat it up in the morning.

Ingredients

  • 1 ⅓ cups almond milk
  • 2 ripe bananas, mashed
  • 1 ¼ cups rolled oats
  • ¾ cup water
  • 4 tablespoons chia seeds
  • ½ teaspoon ground cinnamon
  • ¼ cup fresh blueberries
  • ¼ cup fresh blackberries
  • 1 nectarine, peeled and diced

Instructions

  1. Combine almond milk
  2. bananas
  3. oats
  4. water
  5. chia seeds
  6. and cinnamon in a jar or airtight container; stir together. Cover and refrigerate
  7. 8 hours to overnight.
  8. Place oat mixture in a saucepan over low heat and gently cook for about 5 minutes. Divide between 2 bowls and top with blueberries
  9. blackberries
  10. and nectarine.
