Rice Cooker Super Cheesy Polenta

Ingredients

  • 2 tablespoons butter
  • ½ onion, chopped
  • 1 clove garlic, minced
  • 1 cup chicken broth
  • 1 cup milk
  • ½ cup polenta
  • ¼ teaspoon salt, or more to taste
  • 2 ounces shredded Cheddar cheese
  • 2 ounces shredded Parmesan cheese
  • ¼ teaspoon freshly ground black pepper

Instructions

  1. Place butter
  2. onion
  3. and garlic in rice cooker; close lid and turn on cooker. Cook until onion is soft and translucent
  4. stirring occasionally
  5. 10 to 15 minutes. Add chicken broth
  6. milk
  7. polenta
  8. and salt. Cover and cook on full cycle
  9. stirring occasionally
  10. until polenta has absorbed the liquid
  11. about 20 minutes. Add Cheddar cheese
  12. Parmesan cheese
  13. and black pepper; stir until cheese is melted.

Cook Time: 30 mins

Total Time: 40 mins
