Coconut Pudding

Description

This delicious coconut pudding has a creme brulee richness and exotic taste. Yum! Shake a dash of cardamom or cinnamon on top of each serving, if desired.

Ingredients

  • 2 cups coconut milk
  • ⅓ cup white sugar
  • 2 tablespoons cornstarch
  • 2 tablespoons butter
  • 2 egg yolks
  • 1 teaspoon coconut extract

Instructions

  1. Combine coconut milk
  2. sugar
  3. cornstarch
  4. butter
  5. egg yolks
  6. and coconut extract in a medium saucepan over medium heat. Whisk to combine and melt butter and continue to cook until thickened
  7. 4 to 7 minutes.
  8. Pour pudding into individual portions and refrigerate to cool before serving
  9. at least 15 to 20 minutes.
