Low-Carb Meatloaf with Pork Rinds

Ingredients

  • 1 ½ pounds ground beef
  • 1 cup crushed pork rinds
  • ½ cup grated Parmesan cheese
  • ⅓ cup tomato sauce
  • ¼ cup chopped onion
  • 1 large egg
  • 2 tablespoons chopped fresh parsley
  • ½ teaspoon salt
  • ½ teaspoon ground black pepper
  • ½ teaspoon garlic powder

Instructions

  1. Preheat the oven to 350 degrees F (175 degrees C). Lightly grease a 9×5-inch loaf pan.
  2. Combine beef
  3. pork rinds
  4. Parmesan cheese
  5. tomato sauce
  6. onion
  7. egg
  8. parsley
  9. salt
  10. pepper
  11. and garlic powder in a bowl and shape into a loaf. Transfer to the prepared pan.
  12. Bake in the preheated oven until browned and no longer pink in the center
