Crab Fritters

Description

Crab fritters are fried and served with a garlic and horseradish dipping sauce. Super simple, yet elegant enough to serve to company!

Ingredients

  • ¾ cup light mayonnaise
  • 1 tablespoon Dijon mustard
  • 1 tablespoon prepared horseradish
  • 2 cloves garlic, peeled
  • 2 tablespoons fresh lemon juice
  • 1 tablespoon chopped fresh chives
  • 2 cups oil for frying
  • 1 cup hush puppy mix
  • ½ cup milk
  • 1 egg
  • 1 pound cooked lump crabmeat

Instructions

  1. In the container of a food processor
  2. combine mayonnaise
  3. mustard
  4. horseradish
  5. garlic
  6. and lemon juice; process until well blended. Transfer to a bowl; stir in chives
  7. cover
  8. and refrigerate until ready to serve.
  9. Heat oil in a heavy saucepan or deep fryer to 375 degrees F (190 degrees C). Stir together hush puppy mix
  10. milk and egg until smooth; fold in crabmeat. Drop tablespoonfuls of batter into hot oil; fry until golden brown
  11. 2 to 3 minutes
  12. turning once if needed. Drain on paper towels. Serve fritters with garlic sauce.
