Italian Fish Fillets

Description

Tender white fish fillets are coated with a savory breadcrumb mixture made from Pepperidge Farm® White Sandwich Bread, Parmesan cheese, garlic, thyme, pepper and olive oil, and are baked until the fish is done and the breadcrumbs are golden brown.

Ingredients

  • 2 slices Pepperidge Farm® White Sandwich Bread
  • ⅓ cup shredded Parmesan cheese
  • 1 clove garlic
  • ½ teaspoon dried thyme leaves, crushed
  • ⅛ teaspoon ground black pepper
  • 2 tablespoons olive oil
  • 8 (3 ounce) fillets tilapia or other firm white fish fillets*
  • 1 egg, beaten

Instructions

  1. Place bread

  4. thyme and black pepper in blender or food processor. Cover and blend until fine crumbs form. Slowly add olive oil and blend until moistened.
  5. Arrange fish fillets in large shallow roasting pan. Brush with egg. Divide bread crumb mixture evenly over fillets.
  6. Bake at 400 degrees F for 10 minutes or until fish flakes easily when tested with a fork and crumb topping is golden.
