Gourmet Mushroom Risotto

Description

Authentic Italian-style risotto cooked the slow and painful way, but oh so worth it. Complements grilled meats and chicken dishes very well. Check the rice by biting into it. It should be slightly al dente (or resist slightly to the tooth but not be hard in the center).

Ingredients

  • 6 cups chicken broth, divided
  • 3 tablespoons olive oil, divided
  • 1 pound portobello mushrooms, thinly sliced
  • 1 pound white mushrooms, thinly sliced
  • 2 shallots, diced
  • 1 ½ cups Arborio rice
  • ½ cup dry white wine
  • sea salt to taste
  • freshly ground black pepper to taste
  • 3 tablespoons finely chopped chives
  • 4 tablespoons butter
  • ⅓ cup freshly grated Parmesan cheese

Instructions

  1. Warm broth in a saucepan over low heat.
  2. Meanwhile
  3. warm 2 tablespoons olive oil in a large saucepan over medium-high heat. Add portobello and white mushrooms; cook and stir until soft
  4. about 3 minutes. Remove mushrooms and their liquid to a bowl; set aside.
  5. Add remaining 1 tablespoon olive oil to the saucepan. Stir in shallots and cook for 1 minute. Add rice; cook and stir until rice is coated with oil and pale
  6. golden in color
  7. about 2 minutes.
  8. Pour in wine
  9. stirring constantly until wine is fully absorbed. Add 1/2 cup warm broth to the rice
  10. and stir until the broth is absorbed. Continue adding broth
  11. 1/2 cup at a time
  12. stirring constantly
  13. until the liquid is absorbed and the rice is tender
  14. yet firm to the bite
  15. about 15 to 20 minutes.
  16. Remove from heat. Stir in reserved mushrooms and their liquid
  17. butter
  18. chives
  19. and Parmesan cheese. Season with salt and pepper and serve immediately.
