Potato Onion Lobster Bisque

Description

Made with a lobster base, this soup is a great meld of vegetables with a hint of seafood. Top each serving with shredded Cheddar cheese and chopped fresh parsley.

Ingredients

  • 1 quart vegetable stock
  • 1 cup water
  • 1 ½ teaspoons lobster base
  • 4 potatoes, cut into bite-size pieces
  • 1 tablespoon butter, or to taste
  • ½ onion, halved and sliced
  • 2 teaspoons dried tarragon
  • 2 teaspoons arrowroot powder
  • 1 cup half-and-half
