Lobster Gumbo

Description

Wonderful lobster seafood gumbo. Serve in flat-bottomed bowls over hot cooked rice.

Ingredients

  • 2 tablespoons vegetable oil, divided
  • 1 ½ tablespoons all-purpose flour
  • 1 pound shrimp, peeled and deveined
  • 2 medium onions, chopped
  • 1 cup chopped celery
  • 1 medium bell pepper, chopped
  • 1 ½ pounds sliced fresh okra
  • 4 cups water
  • 1 (14.5 ounce) can diced tomatoes, undrained
  • 2 large bay leaves
  • salt and ground black pepper to taste
  • 1 (6 ounce) can tomato paste
  • ½ pound lobster meat
  • 1 teaspoon gumbo file powder, or to taste
