Ovnskokt Kveite (Baked Fish)

Description

A friend’s mother gave me this over 100-year-old recipe from South Norway last holiday season. It’s really a treat.

Ingredients

  • 2 pounds fresh halibut, skinned and boned, reserving skin and bone
  • 2 cups water
  • 2 tablespoons all-purpose flour
  • ½ cup butter
  • 1 tablespoon fresh lemon juice
  • 1 teaspoon salt
  • ½ teaspoon black pepper
  • ½ cup cream
  • 2 tablespoons sherry
  • 2 egg yolks
