Not-Your-Mama’s Tuna Casserole

This recipe is my own creation and it has evolved over the times I’ve made it. Last night’s version came out really yummy, so I wanted to save it here so I can do it again!

Ingredients

  • 1 cup orzo pasta
  • 3 tablespoons crumbled feta cheese
  • 3 tablespoons cream cheese, softened
  • 1 tablespoon olive oil
  • ¼ cup half-and-half
  • 1 (10 ounce) package frozen chopped spinach, thawed and drained
  • 2 (5 ounce) cans tuna packed in water, drained
  • 1 teaspoon dried dill weed
  • ¼ teaspoon salt
  • ⅛ teaspoon ground black pepper, or to taste
  • ¼ cup shaved Parmesan cheese

Prep Time: 10 mins

Cook Time: 45 mins

Total Time: 55 mins
