Spicy Garlicky Mussels

Description

This is a fresh, incredibly savory way to cook mussels with loads of garlic, onions, fresh herbs, spices and a light tomato lemon twist. Dish up in bowls with rice, pasta, or just crusty bread and a side salad.

Ingredients

  • ½ cup butter
  • 1 red onion, minced
  • 1 head garlic, minced
  • 1 (14.5 ounce) can stewed tomatoes
  • 1 cup diced celery
  • ¼ cup vermouth
  • 1 lemon, juiced
  • ½ lemon, sliced
  • 1 tablespoon hot sauce (such as Louisiana®), or more to taste
  • 1 tablespoon dried thyme, or more to taste
  • 1 tablespoon ground paprika
  • 1 teaspoon ground cayenne pepper
  • freshly ground black pepper to taste
  • 1 pound fresh mussels, or more to taste
