Japanese Miso-Glazed Cod

Description

For Japanese food lovers, this is a delicious way to prepare cod.

Ingredients

  • 6 (6 ounce) fillets black cod, bones removed
  • ⅓ cup white miso paste
  • ¼ cup dark brown sugar
  • 2 tablespoons mirin (Japanese sweet wine)
  • 1 teaspoon toasted sesame oil
  • 2 tablespoons sesame seeds, for garnish
  • 2 scallions, chopped
  • 1 teaspoon toasted sesame oil

Instructions

  1. Rinse fish fillets and pat dry with paper towels. Combine miso
  2. brown sugar
  3. mirin
  4. and sesame oil in a bowl. Stir well until brown sugar is fully dissolved.
  5. Place cod on a baking sheet and brush about 2 tablespoons miso glaze on each fish fillet. Marinate 30 minutes to 1 hour.
  6. Set an oven rack about 6 inches from the heat source and preheat the oven’s broiler.
  7. Place fish under broiler for 3 to 4 minutes
  8. or until top is slightly charred and glaze has caramelized. Remove fish from oven and brush with remaining glaze. Reduce oven temperature to 375 degrees F (190 degrees C). Cook an additional 5 to 6 minutes
  9. until fish is flaky but not overcooked.
  10. Sprinkle with toasted sesame seeds and scallions before serving.
