Description
Pancit is a favorite Pinoy noodle dish; it is usually served as a snack with Filipino pastries. You can easily increase the quantities to feed a crowd. Garnish with pork rinds and fried garlic.
Ingredients
- 1 (16 ounce) package dried rice vermicelli noodles
- 2 ¼ pounds small shrimp, peeled and deveined
- 1 tablespoon olive oil
- 1 onion, chopped
- 2 cloves garlic, minced
- 1 ½ teaspoons achiote powder
- 2 ¼ pounds ground pork
- salt and ground black pepper to taste
- 2 (10.75 ounce) cans cream of chicken soup
- 3 ¼ cups chicken broth
- 3 hard-boiled eggs, crumbled (Optional)
- 2 green onions, chopped
