Cobb Salad

Description

This Cobb salad has some of my favorite ingredients: chicken, egg, tomatoes, blue cheese and avocado.

Ingredients

  • 6 slices bacon
  • 3 eggs
  • 1 head iceberg lettuce, shredded
  • 3 cups chopped, cooked chicken meat
  • 2 tomatoes, seeded and chopped
  • ¾ cup blue cheese, crumbled
  • 1 avocado – peeled, pitted and diced
  • 3 green onions, chopped
  • 1 (8 ounce) bottle Ranch-style salad dressing

Instructions

  1. Place eggs in a saucepan and cover completely with cold water; bring to a boil
  2. then cover and remove from heat. Let eggs sit for 10 to 12 minutes
  3. then cool
  4. peel and chop.
  5. While the eggs are cooking
  6. place bacon in a large
  7. deep skillet. Cook over medium-high heat until evenly brown
  8. 7 to 10 minutes. Drain
  9. crumble
  10. and set aside.
  11. Divide shredded lettuce among individual plates. Top with rows of bacon
  12. eggs
  13. chicken
  14. tomatoes
  15. blue cheese
  16. green onions
  17. and avocado. Drizzle with dressing.

Total Time: 50 mins
