Smoked Shrimp and Grit Cakes

Description

Southwestern shrimp cake with no mayo.

Ingredients

  • 8 large shrimp, peeled and deveined
  • ½ fresh lime, juiced
  • ½ teaspoon garlic powder
  • ½ teaspoon celery salt
  • ½ teaspoon smoked paprika
  • ½ teaspoon cayenne pepper
  • ½ teaspoon ground dried chipotle pepper
  • ½ fresh lime
  • 1 ½ cups water
  • ½ cup quick-cooking grits
  • 1 tablespoon half-and-half, or as needed
  • 1 chipotle pepper in adobo sauce, finely chopped
  • 1 tablespoon adobo sauce from chipotle peppers
  • ¼ cup finely chopped cilantro
  • 1 tablespoon butter
  • ½ red onion, finely diced
  • 2 cloves garlic, crushed
  • 2 ¼ cups panko bread crumbs, divided
  • 1 cup olive oil for frying, or as needed
