Curried Shrimp Bisque

Description

Mildly spicy seafood soup. You could substitute an equal amount of crab meat or cooked sliced lobster for the shrimp. Use dry sherry to flavor instead of brandy if you make this substitution.

Ingredients

  • 3 tablespoons butter
  • ¼ cup finely chopped onion
  • ¼ cup finely chopped celery
  • 1 garlic clove, finely chopped
  • 3 tablespoons all-purpose flour
  • 1 tablespoon curry powder
  • ¼ teaspoon paprika
  • 1 tablespoon tomato paste
  • 3 ½ cups chicken stock
  • ½ pound cooked shrimp
  • ½ cup light cream
  • salt and pepper to taste
  • 2 fluid ounces brandy
  • 2 green onions, finely chopped

Cook Time: 25 mins

Total Time: 45 mins
