Air Fryer Bay Scallops, Asparagus, and Mushrooms

Description

This medley is great on its own but would be good served over rice too.

Ingredients

  • ½ pound bay scallops, rinsed and patted dry
  • 8 spears asparagus, trimmed and cut into 1-inch pieces
  • 4 medium mushrooms, sliced
  • 1 tablespoon olive oil
  • 1 teaspoon lemon-pepper seasoning
  • 1 teaspoon parsley flakes
  • ½ teaspoon ground paprika
  • 2 wedges lemon

Instructions

  1. Preheat an air fryer to 400 degrees F (200 degrees C).
  2. Add scallops
  3. asparagus
  4. mushrooms
  5. olive oil
  6. lemon-pepper seasoning
  7. parsley
  8. and paprika to a large bowl. Stir until evenly combined. Transfer to the air fryer basket.
  9. Cook in the preheated air fryer for 8 minutes
  10. shaking halfway through the cook time.
  11. Serve with lemon wedges.
