Shrimp & Scallop Stroganoff

Description

Elegant comfort food, perfect for a dinner party! A delicious simple seafood sauce with tender shrimp & scallops. Serve with egg noodles or white rice.

Ingredients

  • 2 tablespoons butter, divided
  • 1 (8 ounce) package fresh mushrooms, sliced
  • 1 pound shrimp, peeled and deveined
  • 1 pound sea scallops, rinsed and drained
  • 2 tablespoons all-purpose flour
  • ½ teaspoon ground black pepper
  • 1 (8 ounce) bottle clam juice
  • 1 cup sour cream
  • 2 tablespoons dry sherry
  • 1 tablespoon chopped fresh parsley

Instructions

  1. Heat 1 tablespoon butter in a large skillet over medium-high heat. Stir in the mushrooms
  2. and cook until golden. With a slotted spoon
  3. remove mushrooms
  4. and set aside.
  5. Melt remaining 1 tablespoon butter in the skillet
  6. and stir in shrimp and scallops; cook
  7. turning
  8. until the shrimp are pink
  9. about 3 minutes. With a slotted spoon
  10. remove shrimp and scallops
  11. and set aside.
  12. In a medium bowl
  13. mix together the flour
  14. black pepper
  15. and clam juice.
  16. Pour clam juice mixture into the skillet
  17. and bring to a boil. Reduce heat to medium-low
  18. and simmer until mixture thickens. Reduce heat to low
  19. and stir in sour cream. Return mushrooms
  20. shrimp
  21. and scallops to the skillet; mix in sherry
  22. and cook to heat through. Sprinkle with parsley.
