Tons of flavor with very little work! I spent the day looking for bay scallop recipes online and inspired I came up with this keeper! Serve over rice or noodles.
Ingredients
- 1 pound bay scallops, tough muscle removed
- 1 tablespoon ground ginger
- 1 tablespoon crushed red pepper flakes
- 1 teaspoon seafood seasoning, such as Old Bay™
- 2 tablespoons fish sauce
- 1 tablespoon cornstarch
- ¼ cup vegetable oil, divided
- 2 teaspoons minced garlic
- 1 tablespoon cornstarch
- ¼ cup chicken broth
- 1 small onion, sliced
- 1 (8 ounce) package sliced fresh mushrooms
- 2 small zucchini, sliced
- 1 small yellow squash, sliced
- ¼ cup julienned carrot
- 1 pound peeled and deveined cooked shrimp
- ½ green bell pepper, cut into 1/2-inch squares
